Scalloped "Fauxtatoes"!

I even had my husband fooled with this one. Radishes disguised as scalloped potatoes. Hear me out!

I found this recipe through pinterest. We ate it so fast I never even took a picture! Adapted from here: https://kindketomama.com
Ingredients:
1 lb daikon or regular radish, thinly sliced. I used a mandolin slicer
1 qt chicken broth (32 fl oz)
1 3/4 cup sharp cheddar cheese, shredded and divided
3/4 cup heavy cream
2 tbsp butter
2 tbsp almond flour
Salt & pepper to taste
Dash of cayenne pepper (optional)
Instructions:
Preheat oven to 375 degrees
In a large pot, boil sliced radish in 2 quarts of chicken broth.
Boil for 8-10 minutes or until fork tender.
Drain and set aside.
In a sauce pan over medium heat, melt butter, add almond flour and whisk for 30 seconds. Add heavy cream and bring to a boil, then quickly lower heat to simmer for 5 minutes. Remove from heat and whisk in 1 cup cheddar cheese until smooth and melted.
Season with salt & pepper to taste.
In a greased 8×8 casserole dish place half of the sliced radish in one layer.
Pour half the cheese sauce over the radish, top with half of remaining cheddar.
Repeat with remaining radish and cheese sauce.
Top with cheddar cheese on sprinkle light dusting of paprika.
Bake for 15-20 mins until top is golden and bubbly.
I am telling you.... DELICIOUS. I used regular radishes for ours, I could not find Daikon radishes anywhere in Wegmans.
