Italian Meatloaf

This was a great meal prep on a Sunday - for a dinner a couple nights for one week.

Its a keto meatloaf with an italian twist!




INGREDIENTS:


2 lbs ground beef

1 TB oregano

1 TB basil (i used dried)

1 tsp sea salt

1/2 - 1 tsp pepper

1/2 cup of Parmesan or romano cheese

3 eggs

1/4 cup tomato paste


INSTRUCTIONS


  • Preheat oven to 375

  • Mix all ingredients together (its that easy)

  • Spray a loaf pan with some cooking spray

  • Bake for 45-55 minutes until internal temp is 165-170

  • Pour out some of the fat

  • You can stop with a plain marinara and mozzarella (I chose to just do the cheese, to keep the macros down)


I served mine with mashed cauliflower, steamed green beans with olive oil and a caprese salad (which I shared with my husband)!
