I would not survive Keto without a pizza night. So here we go - Fat Head Pizza Dough!
Ingredients:
1 3/4 cup Mozzarella cheese
2 tbs Cream Cheese (Softened)
1 egg
3/4 cup almond flour
You can add additional seasonings like rosemary, etc if you want a more flavorful crust. I don't - I flavor with my toppings!
Instructions:
Preheat oven to 350 degrees
Place the mozzarella cheese, cream cheese and almond flour in a microwave safe bowl
Heat for about 1 minute until the cheeses start to really melt
Add one egg to the heated mixture and stir it until everything comes together
Allow the dough to cool before you handle it
This makes about two medium pizzas or one large sheet
Split the dough if you are making two
Layout a piece of parchment paper on a baking sheet
Place your dough on that parchment paper
Now place another sheet of parchment on top - the dough is sticky and this will help you shape it!
Mold it into the shape you desire. You can use a rolling pin but I think doing it with your hands is much easier
Once shaped, remove the top parchment paper
Using a fork - stab your pizza all over! give it some air pockets to breathe!
Bake at 350 for about 12-15 minutes until you have the brown golden color you desire. I sometimes do mine for about 20 minutes, Watch it as it cooks so you get the color and crisp you want!
After the dough is where you want it - take it out of the oven and add whatever toppings.
For a red pizza - you can make keto pizza sauce using tomato paste, garlic powder, red pepper flakes, salt and pepper. Just cook it down using some olive oil. Store bought pizza sauce has sugar in it - so make your own!
I would suggest cooking your toppings if you are using spinach, sausage, etc. Brown and saute everything before adding to your crust. At this point your crust is cooked - so add your toppings/cheeses and place in the oven until cheese is melted!
