Breakfast Idea: Cauliflower Hash with Sausage & Eggs

I never eat breakfast - since being on OMAD - but this weekend I decided to live a little and eat three meals a day instead of just one. Counted those macros like a champ!
I decided to throw together something for breakfast that resembled hash/potatoes with eggs. Something heartier. Here is what I came up with!
(this is not my plate... I poached my eggs, but I ate it too fast to take a picture!)

INGREDIENTS
Olive Oil
8 ounces of breakfast sausage
(1) frozen bag of cauliflower rice
(2) eggs
Salt/Pepper
Garlic Powder
Chopped onions/Garlic (optional)
Shredded cheddar cheese (optional)
INSTRUCTIONS:
Brown the breakfast sausage in a skillet using about 2 tsp of olive oil
(if you want added flavor, add some chopped onions/minced garlic to the pan - cook until soft)
Once browned, place sausage in a bowl
Using the same skillet, add your cauliflower rice to the pan.
As it starts to sizzle, add about 1/4 cup of water to the pan and let cook until tender.
Add some salt/pepper and garlic powder for flavor
Using a slotted spoon (to rid the excess water) - scoop the cauliflower rice into the bowl with the sausage.
I added a handful of shredded cheese to the bowl and mixed together.
Next I wanted to poach some eggs to add to the top. You can also scramble or fry. But poaching is so delicious and really easy!
Bowl some water
Once boiling, add a TBSP of White Vinegar or White Wine Vinegar to the boiling water (trust me)
Crack first egg inside a small ramekin or bowl
Slowly slide the egg into the boiling water
Repeat with as many eggs as you want to poach
Using a slotted spoon, push away the foam on the top of the water to look at your poaching egg.
Once you see it done to the consistency that you desire (really only takes a couple minutes) - remove egg with slotted spoon.
Add to top of hash, salt/pepper and ENJOY!~
