Fat Bombs

When I first started keto I had a hard time coming close to my fat macro - and I was missing something sweet. My downfall is salty/sweet. I discovered fat bombs. Fat bombs are literally fat - in disguise as dessert - that help you hit your fat macro. It also calms the Satan inside of you screaming for a brownie. This was the first one I ever tried and it was my go-to for the initial stages of keto. A lot of keto folk will eat their fat bombs during the day - in between meals - I chose to eat mine right after dinner. Made me feel like I was getting dessert out of this process! So here is my favorite - Peanut Butter Cheesecake Fat Bombs
Ingredients:
4 oz cream cheese
2 ounces (1/4 cup) creamy natural peanut butter
1 oz (2 tablespoons) granular Swerve sweetener (or any natural sweetener of your choice)
1/2 cup crushed dark chocolate chips, optional
Instructions:
1. Allow cream cheese and peanut butter sit at room temperature until softened. (I toss them in the microwave for 15 seconds - who has time to wait for dessert?!)
2. In a bowl, combine peanut butter, cream cheese, and sweetener, stirring until well-mixed and very smooth.
3. Scoop small golf-sized of dough and form balls. You can dip them into crushed chocolate chips if you like, this step is optional.
4. Arrange your cream cheese fat bombs on the baking sheet lined with parchment paper.
5. Freeze the cheesecake keto fat bombs for about 30 minutes.
6. Store in the freezer in an airtight container.
Grab and go when you need a sweet fatty kick! You can eat as many as you like - just keep track of your macros!
