Avocado Eggs and Bacon!

Avocado is a great fat for keto - obviously you can just slice it up with any meal but this boat recipe was delicious and super easy to make! Instagram worthy!





INGREDIENTS


1 avocado

2 eggs

2 tbsp chopped bacon

2 tbsp shredded cheese

salt and pepper


INSTRUCTIONS


Preheat oven to 425°.

Cut your avocado in half and remove the pit.

Using a spoon, scoop out some of the avocado so an egg will fit in it. (That extra avocado is a perfect pre-meal snack!)

Crack one egg into each side of your avocado.

Top with salt, pepper, bacon, and cheese.

Cook for about 15 minutes or until cheese is bubbling and slightly browned.  Enjoy!


When I made mine I rested the halved avocado on a cupcake baking dish. But you could really do it as it is done on the picture - use an oven safe pan! These are creamy and delicious! Great way to hit a fat/protein macro!
